GAVI SPARKLING WINE Pairing
Ingredients
- 30 gr sugar
- 2 yolks
- 60 g of Gavi of whatever type should remain
- Leftover panettone
Proceedings
- Combine the sugar with the egg yolks in a metal bowl, stirring with a hand whisk
- Add the Gavi, then transfer the bowl to the stove in a bain-marie, whisking continuously for a few minutes with the whisk to whisk it until it triples in volume
- Serve with panettone slice toasted in pan or oven
