GAVI SPARKLING WINE Pairing

 

 

Ingredients

  • 30 gr sugar
  • 2 yolks
  • 60 g of Gavi of whatever type should remain
  • Leftover panettone

Proceedings

  • Combine the sugar with the egg yolks in a metal bowl, stirring with a hand whisk
  • Add the Gavi, then transfer the bowl to the stove in a bain-marie, whisking continuously for a few minutes with the whisk to whisk it until it triples in volume
  • Serve with panettone slice toasted in pan or oven
