GAVI RISERVA SOUP WITH CINNAMON CROUTONS
GAVI RISERVA pairing
Ingredients for 4 people
300ml of broth from
homemade beef
300 ml Gavi Riserva
200 ml fresh cream
3 egg yolks
100 gr Castelmagno di
grated mountain cheese
1 grated nutmeg
nutmeg
pepper to taste
200 gr bread croutons
cinnamon powder qb
salt to taste
Procedure
Bring the broth to a boil with the wine
white wine, cook for a few
minutes over high heat until it
loses the alcoholic part.
Separately, whip the cream with the yolks
egg yolks and the Castelmagno cheese to
obtain a well
amalgamated. Combine the mixture off
flame, and finish cooking in a bain
maria for 4 to 5 minutes, continuing to
whisking with a whisk, preventing
the mixture from unraveling.
Serve hot with bread croutons with the
cinnamon scent.
