Andrea Ribaldone's Menu for a New Year's Eve "all Gavi DOCG"

The First
GAVI RISERVA SOUP WITH CINNAMON CROUTONS
GAVI RISERVA pairing

Ingredients for 4 people
 300ml of broth from
homemade beef
 300 ml Gavi Riserva
 200 ml fresh cream
 3 egg yolks
 100 gr Castelmagno di
grated mountain cheese
 1 grated nutmeg
nutmeg
 pepper to taste
 200 gr bread croutons
 cinnamon powder qb
 salt to taste

Procedure
 Bring the broth to a boil with the wine
white wine, cook for a few
minutes over high heat until it
loses the alcoholic part.
 Separately, whip the cream with the yolks
egg yolks and the Castelmagno cheese to
obtain a well
amalgamated. Combine the mixture off
flame, and finish cooking in a bain
maria for 4 to 5 minutes, continuing to
whisking with a whisk, preventing
the mixture from unraveling.
 Serve hot with bread croutons with the
cinnamon scent.
